Roaring Table Brewing is looking for a head chef to oversee every aspect of our new kitchen, where we plan on crafting delicious pizzas, sandwiches, and salads. We’ll use the finest ingredients and the best practices, and hold our food to the same world-class standards as we do our beer.
The right person for this job will have extensive pizza-making skills, especially those related to dough and fermentations for both Detroit/Sicilian and Tavern/Tonda Romana-style pies.
This is an opportunity to help create something special from the ground up, and the head chef will have a large role in both the artistic and practical direction of the kitchen. In no particular order and far from exhaustive, here are some of the things we’ll need you to be:
An Artist Help us create and implement our vision for world-class versions of the food we’ll offer. Help design the menu, source the ingredients, hire the kitchen staff, develop the procedures, and provide the inspiration for both traditional and novel iterations. We want to use - as much as possible - fresh, local, and artisan ingredients (flours, produce, meats, cheeses), along with the best culinary processes (long and cold dough fermentations, dough curing, in-house bread baking for sandwiches, etc).
A Manager You’ll need to work closely with the owners on ordering and receiving ingredients, food cost control, scheduling and forecasting, managing kitchen staff, creating social media content, and maintaining the thousand nuts and bolts that hold a high-functioning kitchen together.
A Chef You’ll lead by example in the kitchen, making, fermenting, stretching, and baking dough; assembling pizzas and cooking them; making sandwiches; creating salads; and overseeing workflow to achieve our goals of quality, consistency, and prompt service.
A Jack of All Trades We’re a small mom and pop brewery in a strip mall in Lake Zurich, Illinois. We overcome challenges with elbow grease and a shared sense of purpose. Everyone on our little team pushes in the same direction, and does whatever they can to help keep things moving forward. This job is as far from corporate as it gets; we want you to want to be a part of our team, to share our values, and be genuinely excited to help bring this project to life. Nearly eight years after opening our doors, the one indelible lesson we’ve learned is that running a little brewery is absolutely absurd - unless you’re passionate about it. We can get into the details as we go, but expect this job to be salaried at $60,000 to $70,000 per year with paid time off and the potential for bonuses and considerable career growth.
